
Brown Sugar Boba Fresh Milk
An exquisite artisan homemade beverage featuring warm, gooey muscovado brown sugar tapioca pearls smeared along the inner walls of the glass, engulfed by pristine chilled fresh milk without any brewed tea base. This visually striking drink offers a rich, caramel-like sweetness combined with the clean, creamy texture of whole milk and the chewy perfection of freshly boiled boba.



Ingredients.
- 120gRaw dark brown sugar or muscovado sugar
- 100mlWater for syrup
- 100gUncooked black tapioca pearls
- 400mlCold whole milk or full-fat fresh milk

Bring a large pot of water to a rolling boil using a high heat setting. Add the uncooked tapioca pearls gently while stirring continuously to prevent them from sticking to the bottom of the saucepan. Once the pearls float to the surface, reduce the heat to medium-low, cover with a lid, and let them simmer gently for approximately 20 to 25 minutes, stirring occasionally. Turn off the heat, cover the pot tightly, and allow the pearls to rest and steam inside the hot water for an additional 10 minutes to ensure a chewy center texture.

Carefully pour the cooked tapioca pearls through a fine-mesh colander and rinse them briefly under cold running tap water to remove excess surface starch and stop the cooking process. Shake the colander thoroughly to eliminate excess water droplets before transferring the warm pearls into a clean mixing bowl.

In a clean saucepan, combine the muscovado brown sugar and 100 milliliters of water over medium heat. Stir constantly until the sugar granules dissolve completely and the liquid begins to bubble. Add the drained cooked tapioca pearls into the simmering syrup. Lower the heat and cook slowly for 8 to 10 minutes, stirring frequently, until the syrup thickens into a rich, glossy, caramel-like consistency that coats the back of your spoon.

Using a spoon, scoop a generous portion of the warm brown sugar pearls and drop them directly into the bottom of a tall clear glass. Tilt the glass sideways and use the back of your spoon to streak the thick, bubbling brown sugar syrup upward along the inner walls of the glass to create dramatic tiger-stripe patterns.

Gently fill the prepared glass with ice cubes, taking care not to disrupt the syrup streaks on the sides. Slowly pour the chilled whole milk directly over the ice and pearls. The milk will absorb the ambient sweetness and cool the warm pearls instantly. Serve immediately with a wide straw, instructing guests to stir thoroughly before drinking for an optimal blend of flavors.
